Keeping leafy greens GREEN!

I have a huge problem with my greens. Sometimes I'll buy a package of mustard greens and by the end of the week the entire package will be yellow. The store only sells them in HUGE packages and I hate wasting so much iguana food. I also have this problem with chollards, kale and various other greens I feed my iguana.
Anyone have any suggestions on presvering greens so they last a little longer?
