I guess I just wouldn't use veggies that old, period. Freezing kills the vitamins, and even if you pack them carefully in ziplocks with paper towels, I don't think greens are really very fresh after a week.
When Carmen was smaller, she didn't come close to using up all her greens. I make MK salad using 5-7 differnt types of greens, plus butternut, green beans, red bell pepper, carrot, and parsnip. When she was smaller, I was lucky if I used up 1/4 of the greens I bought. I'm fortunate that I also live with house rabbits who need and love the same types of greens, so it didn't go to waste. But you can use the greens in salads, cook them, etc. That, IMHO, is better than trying to stretch them when they really aren't nice after a week.
These days, I go through most of bunches of 5-7 types of greens in 4-5 days for Carmen alone (I have to get extra greens for the bunnies). :-) Eventually, you will, too!
