I haven't had to freeze the ig salad yet. We cut everything up and put the salad into individual containers. Right now Sneakers is just little so I've been using 35mm film containers. I have enough of these little containers for about 10 - 14 days, (40 of them). We grate the squash and put it in seperate containers, not in with the salad, as it goes to mush faster. With the salad being refrigerated in the seperate container that are not opened until they are going to be served, the salad stays fresh. Around the 8th day I start checking to make sure it is OK. So far it has been. As Sneakers gets larger and eats more I will have to find larger containers.
Hope this helps, Joan
