Black rat snakes are the least tempermental of the five Elaphe obsoleta subspecies. That doesn't mean that they don't need to be tamed. While I understand that it's difficult to handle an aggressive snake, the only way to make it tame enough to be handled is to handle it. Regularly. Frequently. At least daily. Wear a pair of gloves if you have to. And above all else, be patient. Snakes do not become tame overnight.
In the meantime, does the snake have a place to curl up and hide in its cage? If not, provide one right away. That's an essential stress reducer. I ask because you said that you have trouble changing the water because the snake strikes at you. My snakes spend most of their time hiding and probably don't even notice when I change their water.
