From that photo I would guess female, but there are some feminine males out there. Her behavior like a male in breeding season, but there are females that get crazy too I guess. Hopefully someone with a cranky female can add something more!
The scratching and rolling sound normal but the extra aggressive behavior including biting is unfortunate. Are you sure she is feeling okay?...sometimes this could be a sign of stress or illness. Have you had a fecal or bloodwork done recently? Fecal checks are cheap (just make sure you take a fresh one in). Bloodwork is expensive but it's up to you whether you want to go that route.
