Kale, collards, turnip and mustard greens are all very closely related in fact. Kale is often mistakenly accused of binding calcium but its oxalate content (the component that binds calcium) is actually quite low. It has a Ca:Ph ratio of over 2:1 as well. These greens are all in the Brassica genus which means they can potentially cause thyroid problems if fed in excess (goitrogenic).Varying the diet with dandelions or escarole will help prevent such problems.
