Strictly going on nutritional value (without breaking out all the books since I'm late for work) According to USDA numbers kale is 135 Ca, 56 Ph, 447 P.... Collard comes out as 145 Ca, 10 Ph, 169 P...
While Ca:Ph ratios are in the 2:1 ballpark for kale, again without breaking out the books, I'd prefer collard to kale because of the obvious CA:Ph ratio AND the fact that collard contains less than half the potassium of kale. Kale also DOES HAVE known goitrogenic properties. As we all know, oxalates also play a role and, again, I'd have to go to the books.
In citing that article, I'm wondering exactly how we go from cows to reptiles in three easy steps. I also don't put much stock in studies that are more than 5 years old when it comes to reptiles. There have simply been too many discoveries newer than that.
Off to work. Opera in Boston on a lovely (cloudy, possibly rainy day in Boston)....
