At this point, Russell if she wants to eat - let her eat... Make sure she's got a bowl full - whatever size you have - at all times. And if she enjoys eating from your hand then by all means, when you have the time to sit and enjoy time with her give her all she'll take. Try to stay mainly with the greens but occassional "snacks" (banana, orange, etc) won't hurt her either.
Dharma has turned into a horse as of late. We use a Tupperware "sandwich keeper" for her. She's slowing down a bit these days but as recent as 2 weeks ago we were filling it at LEAST twice a day. If her appetite has already kicked in keep it going. In between vet visits Dharma lliterally doubled her weight and grew 5 1/2 inches. That was only a four month time span.
Keep her well humidified once she starts to shed and with any luck at all the thermal burns will start to shed a bit as well....
Keep us posted... Sounds like she's going to be just fine in the long run.....BTW, what was the vets diagnosis on her tail ?
