I make his salad for the week, and when I get ready to serve it, THEN I mix some greens in. I also serve greens on the side.
Alfalfa is often the culprit of soggy food. (It naturally breaks down the food. Predigestion--yuck!)Do you use alfalfa? You could also, especially during the spring, use fresh veggies or even frozen.
Another trick I use is a 'Salad Spinner' to drain the veggies and greens after I wash them. It spins the veggies very fast inside a colander and throws off the excess moisture. You can find one at a kitchen specialty shop. It has been a BIG help in preparing Bad Boy's food.
