What does it all mean?

I haven't had my ig long (and am woefully IGnorant) and I was wondering what it means when he shakes his head? He does this sometimes as I approach, or reach towards him. It's a quick side to side shake. Also, he is orange/brown mostly, not green. Could this be caused by improper care by previous owner, or are some igs just that color? He is 4-5 years old and 32" long. (22 of that is tail!) He has never tried to bite(taste, yes) but he has hissed at me and when I was trying to rub some of the skin where he is shedding (in the tub) he swung around and hit me with his snout. Will it hurt him if I gently rub the shedding areas? (I know not to pull, I have had sunburn before!) I'd appreciate any advice, please email me!
