Kristin,
Here is my experience, although I don't know if it is the same as everyone else's.
I have 4 CA Desert Tortoise, One Sulcata, and a box turtle.
My Tortoises are by far the most social - will eat from the hand, like their heads and chins scratched, will beg for food, etc.
The box turtle is shy, will not eat from my hand, and closes up almost everytime I go near her.
