Justin, you are still confused about the sources and effects of secondary plant compounds. Spinach does not cause hypothyroidism (goiter). That condition is (potentially) caused by consuming plants in the Brassica genus but the effect is not related to their iron content. Brassicas contain glucosinolates which break down into several different toxic metabolites that inhibit the uptake of iodine by the thyroid. Perhaps you should try to get a better understanding of these issues yourself before attempting to advise others.
