Eating habits/age questions???

Hello, I am fairly new to Tortoise ownership but have read several care books and internet info. We have one russian tortoise that we adore! I am concerned with some of his eating habits however. He seems to go for 2 sometimes 3 or more days without eating. I've tried introducing different greens to see what he likes, so far his preferences seem to be romain lettuce and cauliflower. Also strawberrys but we only allow him small amounts of that.
When he does eat, he'll eat a fairly large amount. Does this have something to do with hibernation period?? I'm a bit weary of trying my had at that aspect but understand that it makes for a healthier tortoise is this correct? If not, I'd prefer not to put him into hibernation.
Also is there any way to estimate an aprox. age? The petstore of course had no info and my son would like to kind of know.
