I wouldn't feed the alfalfa, it's too high in protein to be a regular part of the diet.
Maybe cut back on the fiber a little bit, did you notice the change in him after adding more fiber to the diet?
Just adding grass to his diet is really enough fiber. I've noticed that my baby sulcata doesn't handle the hay too well.
But with grass added into his greens he is fine.

Is he passing stools and urates in his soak?

I would add a bit more variety to his diet, maybe a little endive, romaine or escarole etc mixed in (endive is a good food). And even a little grated yellow squash and/or carrot once or twice a week.
Shake the diet up a bit with some tempting items.
The grass and timothy hay are fine and do help provide fiber, but I would cut back on them just a bit.
Make sure he's passing stools on a regular basis. If not, soak him a bit longer and replace the water as it cools down.
