Collards... update

I have a russian tortoise.
So are Collards a yes or a no??
What should I give him for protein and what is the best type greens?? Everyone says greens but what kind?? I have been told no green beans also. I am getting really confused... and I need help quick!
I think that the Care Sheet I got at the Pet Store said Grape Nuts or some kind of high protein dog food (which I don't give him)(I will check for sure to see if that is where I saw it... I did see it somewhere - I really did not dream it up... Wouldn't do that... Too much of a novice. The pet store care sheet also recommended (defrosted) froz mixed veggies (That is what they were feeding them (comprising of green beans, carrots, peas, corn, etc... and they also recommended the Romaine Lettuce.
Look guys, I don't know, I am just trying to do the best for my tort, but I keep getting mixed feelings and answers on what is best to feed him... Can you recommend... Cause you are all probably successful tort owners...

Sweet Potatoes? Squash? What (best) kinds of dark greens? What for Protein?? How much in that once-a-day feeding? HELP! Thanks
