In the wild they will eat the feces of various animals, and even their own or other torts as well.
All you can really do is make sure you pick the poop up every day.
I have two dogs, asnd the tortoises have their own large fenced in area.Large but not large enoughy to keep two very big sulcatas from getting bored.
So at around 11 am I open up the gate to that area and let the sulcatas out to roam the entire yard.
The dog door is put on and the dogs stay in the house during this time. At around 4 the torts go back into their own area and the dogs are let out again.
This gives the torts a much larger area to roam during the day. Ensures that the dogs won't harm or pee on the torts!
And gives me time in the morning to do what has become known around here as, poopy check( pick up the doggy poop)!

: I can't pick up the poop fast enough! I worry about the high protein level they're getting, as well as their overall health from eating this gross stuff! Their diets are great; they roam my big yard, plus I supplement twice a week with a 'salad' sprinkled with vitamins and phosp/calcium. Any feedback would be appreciated.
