Why do sulcatas eat dog poop?

I can't pick up the poop fast enough! I worry about the high protein level they're getting, as well as their overall health from eating this gross stuff! Their diets are great; they roam my big yard, plus I supplement twice a week with a 'salad' sprinkled with vitamins and phosp/calcium. Any feedback would be appreciated.
