Texas Rat ?

I have a 21" wild caught Texas rat snake that I have had for about a month. He (don't know for sure) is eating 2 thawed fuzzies once a week - is that okay? He is starting to look a little flaky on his head - is he about to shed, do their eyes change to a milky color like I've read other snakes do, and what concerns are there about feeding and handling if he is shedding?
Any info about Texas rats would be appreciated.
