Hi there, Im a fellow South Aussie as well.. i havent been on the forums lately so i apologise for the lateness of my reply.

I too have experienced the same colour changes with my two golden bells. Initially when i received them they were both a beautiful golden colour with areas of lime green.. However since I've had them in captivity they've changed to a darker colour. My theory is that because my room does not receive much natural sunlight.. their colours have changed to blend into their background. I say this because on sunny days when light is sufficient enough to reach them.. they change to a nice golden colour. I do use artificial lighting and this produces the same result.

What is the lightnig like in you Golden bell's tank?
If they are eating well and active there is nothing to worry about.

I doubt that this colour change is a sign of stress since i often see them basking on the logs and ontop of my mini waterfall in plain view.. only jumping away once they see me getting too close *)
