You could probably keep any north american species outdoors year round.

I don't want to tell you how deep or what to do with your pond, though. You should talk to local keepers about that. Koi ponding is a BIG hobby, and you should have no problem finding people in your area (start on the internet) with plenty of advice on setting yourself up down there.
