Snappers are niether endangered nor protected - With a valid fishing lisance I believe you can take 2 a day.

Snapping turtles as a whole throughout the country, are not protected, and have local game laws that limit the amount taken, ect - Bull and green Frogs also usually have these regulations - as they are taken for frogs legs -
