Personally, I like tofu. Tofu has no flavour and not much in the way of smell, so I can easily toss it into the blender along with the rest of the salad and Dexter won't know the difference. However, tofu should be given once a week.
Keep in mind that Dexter is a growing boy and NEEDS protein. For an adult iguana, it would probably be better to stick to alfalfa hay. Sometimes they put some pretty weird stuff in alfalfa pellets.
