I am by NO way an expert, but when I first found Buddy, she didn't trust me much. She never tried to bite me, but lots of tail-whipping and hissing. The best way I found to get her out was to pull my shirt-sleeve over one hand so she couldn't see my hand... then I'd kind of stick this in front of her like a branch. While I was manuevering my covered hand, I would use my other exposed hand to keep her attention and coax her onto my covered hand/arm. Once she was on my arm/shoulder she would usually calm down.
I've had her since the middle of last summer, and now she's one of the tamest igs I've ever been around! All I have to do to get her out of her cage is open it and hold my arm out. She usually grabs on and crawls up to my shoulder. Although she definately lets me know when she doesn't want to be held (rare).
Hope that helps... There's really no set way to do it, just try to do it while causing the least amount of stress to the animal. Iguanas are fairly resistant to stress, and can handle quite a bit, but ya still need to take it easy. It's always best if you can learn to do it on the animal's terms... I know it sounds strange, but eventually you'll figure out what I mean! lol.
