It's hard to say how big a one year old iguana should be. It depends on diet, prior care, and genetics. A REALLY big one year old might be as long as 3 ft. But you shouldn't expect that size...
The diet should be largely comprised of greens such as collards, mustard greens, dandelion greens, escarole, turnip greens, etc. Also include other veggies like snow peas, green beans, butternut squash, bell peppers, etc. Spinach is not toxic to iguanas, but it shouldn't make up much of their diet. It's an oxalate (like you said). Oxalates bind calcium so the ig can't absorb it. Other greens/veggies that you shouldn't feed much are brocolli, bok choy, cabbages, beet greens & beets.
If you want a good book about iguanas, you should get either James W. Hatfield's "Ultimate Green Iguana" or Melissa Kaplan's "Iguanas for Dummies." (I think I left off part of Hatfield's book, but you should be able to find it with that info.)
