for *hard* foods like sweet taters + some squashes (like acorn or butternut): i'd remove the peel ... "softer" vegies like zucchini, yellow squash i don't peel ... carrots + parsnips, i just washed really really good ... then either use the vegie peeler to make lots of nice thin slices or i'd use the grater ...
for the most part, iZ liked his vegies to be grated and mixed in with the greens better than he liked the vegies sliced ... but he also liked that the "shape" of his food could be varied as well as the "menu" itself ...
(the more i think about it, the more i realize that iZ had ALOT of "rules" for me to learn and follow!!!! he sure had to work hard to get *me* trained!!! *smile*)
green beans ~ more "iZ rules" ...
iZ preferred (gasp!) *canned* green beans over fresh ... it's what he ate before he + i met and me just preferred mooshy beans i guess ... if i ever *did* get *fresh* beans for him, i had to stand + slice them into little skinny "french style" like the canned ones or he wouldn't eat them ...
and ... if your ig is little, that could be a necessity ~ keep in mind that they don't "chew" ... but iZ was almost 6' + weighed 13 pounds so it was just a matter of what *HE* wanted/liked ...
