To know whether your ig is too skinny or not you should look at his tail and thigh. If he is skinny indeed you should add some vitamins in his food. What are you giving him to eat?Only salad is not enough!!
I never saw my igs drinking water either but I leave the bowl inside the cage.Sometimes when is too hot (I keep my igs outdoors)they put their arms in the water.
I dont know if your ig will like to eat his salad
if you add water to it. Mine donk like wet food. Maybe if you just spray some water will be OK.
Iguanas can change their color to orange, dark green, light green, light brown and dark brown very easily.Sometimes they also become gray.

Why dont you post a photo of your iguana?

: Hi, it's me again...lol.
: How do you know if an iguana is too skinny? I can feel his ribs...but I can't see them, but he looks much thinner than a lot of the pics of your iguanas I see here. I never see him drinking water, but it is available at all times and I do mist him and give him a tubby; but I still never see him drink. Should I add water to his salad?
: He only eats about 3/4 - 1 cup of salad a day, but always leaves a little.
: Also after his shed I noticed that he has a lot more orange on him than before...is that okay that he changed colour or is he lacking something? I've checked his 'tooties' and I don't see any sign of worms, would iguana worms be visible in his tooties?
: I've only had him for about a week and I will post a picture soon to show you what he looks like.
: Thank you again everyone for contributing to an excellent site for gaining iguana knowledge from personal experience.
