Ok, update from mom-in-law:

She's all done shedding now and she has started eating again. So maybe I was panicking for nothing. The other stuff about her being real calm and stuff is still true though. And I could still use some help with the heat issue. Thanks again (sorry I spelled your name wrong Jamie - I wasn't looking at the screen when I was typing!!)!
