Biting is a normal act of an iguana (or any reptile for that matter) so I wouldn't worry too much about it. Also, iguanas WILL try to escape no matter what, even my 5 yr old iggy (which I've had virtually his whole life) will attempt to get away from my grip every once in a while, although I have made him relatively tame by now.
You haven't done anything to make your iggy mad, its just something that they do. Their philosophy is to trust nobody. Just handle her daily and she'll get calmer, although it could take much longer than that for her to become ultra tame.
Keep in mind that your iggy is an otherwise wild animal, and won't like being around humans like a dog or cat would. All it takes is a little patience (and a little time) to tame your ig. Good luck.
