Both are fine to add for variety but don't feed as a lone staple.
As for greens -I haven't heard anyone talking about feeding cooked greens to their iguana. Greens are usually served raw, shredded or torn into managable pieces.
I suppose if you wanted to cook something just to add variety, steaming would be the way to go since that is the cooking method that depletes the least nutrients in the food.
