Stress probably has a lot to do with it. Is she in a low traffic area where people don't walk by her cage on a regular basis? (if not, that may cause her more stress).
If she is pooping, it would be a good idea to take a sample to the vet to rule out parasites which decrease the appetite.
I am afraid I do not know the diet requirements of a spiny tail. If they are insectivores, I would try giving her some gut loaded crickets. Find out what her previous diet was because even if it wasn't a good diet, you may be able to tempt her to eat some and slowly transition her into a proper diet.
Good luck. Others here may have more experience with spiny tail igs.
