I painstakingly cut it up in pieces and then use a carrot shredder for the inside or a knife to cut small slivers off. I don't use the skin and I don't cook it.
The small summer squashes and zuchinni you don't have to really peel the skin. These squashes aren't quite as nutritious but they add variety to your salads. Of course the easiest veggies to serve are never the most nutritious!
