Your vet sounds like he's pretty well on top of his game judging by the care sheet. Find out if it is one he developed himself or if he found it somewhere - and how much of it he agrees with.
Off the top of my head, rose, nasturtiums, and hibiscus are fine - as long as they have been grown w/o the use of any pesticides or commercial fertilizers. The mulberry and carnation I'd have to look up but I would assume that they are ok if they are grouped in with the others. It's not often that you see an iguana care sheet including edible flowers ESPECIALLY coming from a vet.
Brocolli, cabbage and kale CAN contribute to thyroid (and kidney I believe) problems if fed in large amounts (i.e. daily for weeks/months) given once in a while (once a week or so) as a change of pace shouldn't cause any problems.
The timothy hay, I'm guessing, would be a source of vegetable protein. Alfalfa (not alfalfa sprouts) can also be given.
