Christy, your collards are going to seed, called bolting. Collards are best grown when the weather is a little cooler, and in hot weather, they try to bloom and go to seed. Try breaking out the blooms as they appear. This should direct the plants' energy to producing leaves instead of seed.
I believe you are in the Cleveland area, and Ohio has many Meijer grocery stores. Try one of these if you haven't already, as I have found that they always have collards, mustard, and turnip greens.
