Hi Tiffany,
I would recommend that you completely stop feeding the romaine lettuce, the celery, and ease up on the carrots, and apples. Actually, nothing you're feeding right now is super rich in nutrients, so I'd consider changing her diet dramatically.
I feed my iguanas collard greens (at least two times a day, more if needed), mustard greens, snow peas, green beans, blueberries, acorn squash, butternut squash, yellow squash, parsnips, zuchini, raspberries, and a little bit of sweet potato or yam.
Also, I *wouldn't* go to feeding every other day--especially if she's not been getting all of the nutrient-rich veggies I mentioned above to this point. She needs the nutrients! Instead, I'd try changing her diet and see if she doesn't just love it after you change it. I bet she will!
If not, I'd try feeding her later on in the day. But really, I wouldn't worry so much if she seems to prefer the stale veggies...but my guess is that she's trying to tell you that her diet so far isn't quite what she needs it to be and that she'd like you to change it.

I hope you make the changes I mentioned, and then be sure to let us know if she's eating better down the road! I'm glad you reached out for help--it's how we all learn. (When I adopted my first iguana, Habib, I was told to feed her iceburg lettuce and a canned mandarin orange about once a week. She almost died because of that diet, by the way, but now that I feed the long list I wrote out above, she's a fatty and is very much alive.
Good luck on the new diet!
Diana
