I've heard that the least stressful way to get an iguana used to a leash is not by the upper-body harness, but around the hips just above the lower legs. Take this with a grain of salt because I don't know as much as I'd like to =)
Like Mom over there said, it sounds like your ig is just stressed out and needs time to adjust. Handle her reguarly and eventually she'll understand that you're not going to make an iguanaburger out of her.
Oh yeah, one more thing on leashes..I wouldn't trust them too much. I've seen iguanas whose spikes were damaged because of misuse of leashes.
