I peel my yellow squash (the kind with a hooked neck) and zuchini because around here they usually dont have a great skin. The kind of squash that I have actual trouble peeling is not "yellow squash" its actually orange fleshed squash like Acorn,Speghetti, and Butternut. These kinds of squashes have extremely tough skin, I cant imagine an ig eating this skin raw, its tough! The squash itself is actually pretty tough, almost comparable to a pumpkin, but tougher in my opinion. So, I dont cook any of my veggies for ig salad, once we finally get one of those big hard orange fleshed squashes peeled I run it raw through my food processor on shred, it shreds it nicely so my ig can eat it easily. I make my salad in bulk then I freeze it, so a cheese grater would take me forever to make salad with. I pretty much feed my ig the MK salad, but, with a few alterations, she also recommends you peel the orange fleshed squash (again, not Yellow Squash).
