Hello, I also make my ig salad in bulk and freeze it, its way easier than doing it every few days. I was just looking for easier ways to peel the hard orange fleshed squashes. My husband always peels them, and hes beginning to hate it ( and I know I dont wanna do it, they are hard) Im going to try cutting them in half then baking them for a bit. I like the way my salad comes out now with the raw squash, I dont want my salad consistancy to change. I will also try the other suggestion about using a veggie peeler. P.S. It may help if we invested in a really good set of knives,, my knives are horrible.
