Yep that happens to everyone I'm sure. Misting the veggies does help and obviously keeping them in the cooler part of the cage. My iguana usually runs to his food dish and scarfs most of it down so most of it is eaten it the preferable fresh condition, but he doesn't seem to mind eating it when he leaves some nasty leftovers wilting in the afternoon-- he'll gladly eat those too so I wouldn't worry too much. My bearded dragon on the other hand only eats FRESH watercress, but will eat squash and sweetpotatos that are older. He is the pickiest thing!
