Shedding and Jumping

My first question is about shedding. How many times a year do they shed? i've had Charlie since Feb. and he's on his second shed. And does any one else pick at thier ig While shedding or am I the only sick one here. Second, some times I see Charlie kinda jump, as if someone just scared you. What's that all about?
