Some have suggested a shirt with your scent in his cage (get him used to your smell). A bit of handling every day-- calm and gentle will help, but it takes awhile. Feeding him a fruit or favorite veggie treat by hand will perhaps make him not be so afraid of you.
Also, he may be stressed if he is missing any of the following-- proper lighting (UVB tube light/ and a sep. heat lamp bulb), a hidey hut in his cage for safety, too small of a cage, lack of calcium supplement, lack of a good diet (collard, mustard greens, dandelion, watercress, escarole (a mix of these greens) supplemented with sweet potato, squash, zuchinni, and a couple bites of fruit--berries/melons) These are some essentials to keeping a healthy iguana.
