Keeping it fresh *supposedly* better....but blanching, boiling or nuking for a few minutes...does a WORLD of good by reducing concentration of oxalates, goitrogens,phosphorus, purines and other phytochemicals harmful to your ig, with very little loss of important nutrients derived from them. Rice fed to your ig should always be rinsed first then cooked...as rice (uncooked grain)is dusted with preservatives. Whenever Ive blanched, parboiled greens serve it a little warmer than room temp both my igs devour it, but I cook their greens rarely...mostly they eat fresh just for convenience sake. Most vitamin loss occurs when giving frozen foods for an extended period of time (about a month straight) Thiamin supplementation may be necessary to replace Vit. B1. Canned collard, mustard,turnip greens and other veggies should be rinsed thoroughly to eliminate excess sodium before serving.
