Yes letting the water stand for 24 to 48 hours will take the stuff out of city water. I use to have to do that with my fish tank. I'd have 5 one gallon jugs sittin' around the house with dates on them.
A suggestion if you are concerned with humidity, is to enclose the upper half of your iguana's cage in plexiglass and then pump moisture into the area.
In general, the average home can not get close to what a natural iguana's environment is. All we can do is to continue to improve as best we can. We use a humidifier in the iguana's room, trying to keep the level in the upper 80's to low 90% humidity. But they have they own room and not everyone's iguana has that. One thing you can do, is to keep the water in the spray bottle at a temperture close to 85-90 degrees. If there's a room you can move your iguana's cage to, that isn't air-conditioned it would be the best. If it's hot where you're at, open the window to the room and close any vents if you have A/C.
