I think that I can probably help out a bit with this dilemma, since my boyfriend has a pair of uroplatus sikorae he has to keep in a very humid environment. The trick for misting his little guys was to make a misting system himself. Here is a link he posted on the gecko forum.

Technically it is a "fogger," but in realiy, if all you really need is to keep the little guys humid, it should do wonders. His enclosure is pretty small (33 gallons) but he only has the fogger on 15 minutes of every hour (on a timer) since it works so well it would overflow the enclosure with humidity if he had it on continuously.
For drinking purposes, I am guessing it would be good to mist the enclosure about once a day, since that way your anoles can lap up the moisture in actual droplets. Either way, this setup has been working wonders for my boyfriend, and he is able to keep the enclosure at around 80% humidity, which I am assuming will be too much even for your knight anoles if they are anything like anolis carolinensis.
