here are some food items I would leave out of his diet.Just my opinion.

All fruit, fruit is too high in sugar to feed to sulcata.Feeding fruit can lead to loose stools, intestinal problem even colic. A tiny piece once a month won't harm him, but fruit shouldn't be a regular part of the diet.Personaly I never give my sulcata fruit, they do get opuntia cactus though.I would feed the kale and collards in moderation, and add endive and turnip greens to his diet on a regular basis.
Collards and kale are fine in smaller amounts.
Carrot , yellow, squash and yam are fine, also in smallish amounts but maybe not fed daily.
I wouldn't feed any comercial tortoise food/pellets etc, most are way too high in protein to feed to sulcata who need a low protein/high fiber diet.
Instead mix some burmuda grass or timothy hay in with his greens.
I wouldn't feed the veggies you have for dinner either, peas, beans, corn etc are again too high in protein.

You can sprinkle a calcium supplement on his food maybe once or twice a week, it should be phosphorous free. Rep Cal phosphorous free calcium with vitamin d3, is the one I use. You can find it at Petsmart along with Herptivite.
(The makers of Rep Cal also make a vitamin/mineral supplement called Herptivite, formulated to use with Rep Cal.)Also available at Petsmart.

Especially if it's dark, leafy and green! (diet research is something I've been doing quite a bit of, but I'm open for suggestions from others!) Every morning I give him a few leaves of Kale, Collard Greens, and/or Romaine. And then I alternate adding different combinations of chopped carrots (half cup or so), chopped zucchini, apple, grapes, or banana. (if I don't have fresh fruits available I give him "Tetra Terrafauna Iguana, Land Turtle, Tortoise food")
: When we have dinner, I give him some more Dark Leafys, and some of whatever vegetable we're having for dinner. (thawed but not cooked)
: I also give him a treat of Timothy or Alfalfa (Two handfuls, once or twice a week)
: I sprinkle Bone-aid (by T-Rex) Calcium Powder and Reptivite (Zoo Med) on his food in the morning. From what I've been reading, I believe I should be giving him a vitamin with no phosphorus though, and the Reptivite has phosphorus in it.
