How old are your guys? Do they have a pinkish tint around the nares and eyes? If so these are signs that they are in breeding mode. My adult pair have been displaying & mating for the last 2 months. If you have a sexed pair they are probably doing a mating ritual, if you don't know the sex, you might want to seperate them until you have the time to observe that its not stressing them out
if they are adult I wouldn't worry about them eating dirt - but you might want to supplement their diet with more calcium and an occasional vitamin mineral.
If these are still small, try using a moss type substraight that will retain moisture and is eddible.
I'm sure you know they like high humidity, right.

: The smaller one keeps bobbing his head up and down when he's sees the bigger one. Then he rams his shell into him. Then the big one turns around and they start fighting. Do I need to seperate them? I'm not sure if its stressing them out or not. They have been kept together for about 3 years now.
: I'm having trouble finding suitable bedding for them. The smaller one tries to eat everything. He'll even try to eat rocks. Is there a certain bedding that would be edible and suitable for elongates?
