Loose the green beans.
That is, take the beans out of the husk and only feed the husk. See if she will eat it chopped. If she does, mix this with what you want her to eat feeding primarily the bean husks and slowly shift the ratio to a more varied diet. Also try some earth worms. It would seem that Hermans are very similar to american box turtles in behavior and habit. On numerous occasions I've found mine foraging in the leaf litter looking for what I believe is bugs and stuff.
