Herman's Tortoise

I am sure it is obvious that I am a novice.....BUT my Herman's Tortoise does not want to eat anything but green beans. I put
red leaf or romaine lettuce, squash, shredded carrots, clover, kale, dandelion leaves....nothing...she will not eat.....I put cooked green beans, no salt or anything added, of course, and she eats like a pig. I keep Vitakraft Special available all the time but she rarely eats any of that either. I also offer Zoo med's box and tortoise food--no way. She will not even touch tomato or melon. Is she just picky? Am I offering to large a variety?
I do not want to do the wrong thing....the people I bought the
tortoise from offered little or no information. Tortoise is active and not losing weight -- any advice would be greatly appreciated.
