My method varies a little form year to year on the timing, depending on the outside temps.
I try to shoot for the last feeding of the year in mid November. Some of mine go off feed on their own however as early as mid October.
At the first of December, I just move all the adults into the cool room. This is a room downstairs that will normally get down to 40°F or so in the winter. I have a baseboard heater in the room set to 55°F so the temperature doesn't drop below that. During warm spells in the winter the temps may raise as high as 65°.
I warm them back up around Valentine's day. I never have used any step up or down with the temps, it's just all at once.
I also use rubbermaids with a water bowl, but I don't use a hidebox.
