you could try to get some of their saliva tested for viruses (don't know how, but it's an option)

I have CVID, and have never had a snake-bite-related infection, even from snakes larger than your rats, due to me cleaning them really really well (lots of H202)

Unless your bloodflow to extremities (ie hands and feed) is slow as a result of the diabetes, i wouldn't think that you would recieve a virus in the bite, unless you're noticing obvious festering in the bite, and even then i would think it's from something entering the wound after you're bitten

it sounds more like a kind of inhaled infection, before my CVID was controlled i had almost constant symptoms such as you describe due to a small persistent lung infection that would flare up every few months into massive infections
