I've heard the same thing (don't keep water with subocs) but I just can't bring myself to keep any animal without water. I've had my subocs for three years and they have never regurged. I live in Washington where it rains often but you don't feel the humidity like you do in the southeast US. I keep the enclosures dry, and have a small bowl of fresh water available at all times.
